This salad may seem simple, but it’s full of beneficial ingredients:

Raspberry goat cheese salad

Ingredients

2 servings

  • 1 1/2 tbsp Extra virgin olive oil

  • 1/2 Lemon - juiced

  • 1 tsp Honey

  • 1 1/2 tsp Shallot - finely diced

  • Sea salt & black pepper - to taste

  • 4 cups Mixed greens

  • 1 cup Fresh raspberries

  • 1/2 Avocado - sliced

  • 1/3 cup Goat cheese - crumbled

Directions

  1. In a small bowl, whisk together the oil, lemon juice, honey, shallot, salt, and pepper.

  2. Arrange the mixed greens, raspberries, and avocado on a serving platter.

  3. Drizzle with dressing.

  4. Crumble goat cheese on top.

    Enjoy!

  • Fresh blueberries are a great addition to this salad. They are high in antioxidants and help reduce inflammation and help improve your fertility.
