These strawberry almond frozen yogurt bars are quick to make and will satisfy your sweet tooth while adding healthy fats and collagen to your diet.
Collagen powder may seem like a trendy supplement lately, but did you know that adding collagen to your diet is important for reproductive health? Collagen provides essential nutrients, including glycine, an amino acid that is essential for a healthy pregnancy. Glycine helps prepare the body for pregnancy and is required for fetal DNA and collagen synthesis. Strawberry almond frozen yogurt bars for to boost your fertility
Ingredients
8 servings
1 cup Unsweetened coconut yogurt
1/2 cup Cashew butter (smooth)
19 g Collagen powder
1 tsp Vanilla extract
1/2 cup Strawberries - chopped
1/2 cup Almonds - chopped
6 oz (1 cup) - Dark chocolate - chopped or chips
1 1/2 tbsp Coconut oil
Directions
In a medium bowl, combine coconut yogurt, cashew butter, collagen, and vanilla.
Line a baking sheet with parchment paper.
Place approximately 3 tablespoons of the yogurt mixture on the parchment paper. Try to make it a circular or oval shape.
Add a popsicle stick. Make sure the stick is approximately halfway across the shape. Cover with the yogurt mixture.
Add chopped strawberries and almonds, pressing lightly into the bars.
Repeat with the remaining mixture to create eight yogurt bars.
Freeze for 2 hours or until completely frozen.
Melt the chocolate and coconut oil in a small bowl over a double boiler or in the microwave in 30-second intervals.
Remove the bars from the freezer. Using a spoon or spatula, cover the bar with melted chocolate. Place back onto the parchment paper and repeat with the remaining bars.
Freeze for 20 minutes or until the chocolate is firm.
Store in an airtight container in the freezer for up to one month.
Thaw 2-3 minutes before eating.

Recipe Notes:
Have extra melted chocolate after covering the yogurt bars? Toss a few almonds or strawberries in the chocolate and place on parchment paper in the fridge until firm for an extra sweet treat!
You can easily replace the strawberries with raspberries or blueberries.
No cashew butter? Substitute smooth, natural peanut or almond butter.
